We've transformed slow cooker chicken breasts into a gorgeous chicken piccata, an Italian dish using lemon, butter and capers.
Brown the chicken first, before adding to the slow cooker and you'll have a deliciously tender meal packed with flavour.

1 tbsp. vegetable oil
500 g chicken breast
3 lemons
250 ml chicken stock
125 g unsalted butter
200 ml white wine
2 tbsp capers, rinsed
Large handful of parsley, roughly chopped

- Heat the oil in a large non stick pan. Add the chicken breasts and cook on both sides until browned and golden. Remove to the slow cooker. Slice one lemon into slices and juice the remaining two. Add the lemon slices to the slow cooker along with the chicken stock. Season and cook on high for 1hour or until the chicken is cooked through.
- Once the chicken is cooked, melt 75g of butter in a wide saucepan. Once melted pour in the wine, 60ml of lemon juice, capers and a large splash of the chicken cooking liquid. Cook over a high heat until reduced by half. Switch off the heat and stir in the remaining butter. Season to taste and stir in the parsley.
- Serve with the sauce drizzled over the chicken breasts and with mashed potato.
